  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 1/2 cups Tate+Lyle® Organic Turbinado Raw Cane Sugar
  • 1 large egg, room temperature
  • 2 teaspoons Fairtrade certified vanilla extract
  • 1 1/2 cups Fairtrade certified ripe bananas (about 3 medium), mashed
  • 1/4 cup Fairtrade certified semi-sweet chocolate chips
  • 1/4 cup Fairtrade certified chopped walnuts (optional)
  • 1/4 cup Fairtrade certified unsweetened cocoa powder

How to make this recipe


  1. Preheat oven to 350˚F. Grease a 13-in. x 9-in. baking pan and line with parchment paper.

  2. Combine flour, baking powder and salt, in a bowl and set aside.

  3. In a large bowl, cream butter and sugar until light and fluffy; add egg and vanilla. Stir in bananas. Add flour mixture to creamed mixture, mixing well.

  4. Pour half of batter into a large bowl. Add chocolate chips and nuts (optional) to original batter; mix well. To the other half of batter add cocoa and mix well.

  5. Spread cocoa batter into prepared pan. Spoon remaining batter on top. Bake 35 minutes or until a toothpick inserted comes out clean.

  6. Transfer pan on to a wire rack and cool completely in pan. Invert onto a cutting board; remove parchment paper. Cut into 18 bars.
