Coconut Gelato

Whether or not the sun is shining, the tropical island flavor of this refreshing treat will whisk your taste buds away to a dessert paradise! Try serving it directly in fresh cut coconuts for an impressive presentation.

INGREDIENTS

  • 2 cups cold heavy cream
  • 1 cup coconut flakes
  • 1 cup whole milk
  • 1/4 cup Tate+Lyle® Organic Raw Cane Sugar
  • 1 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract

INSTRUCTIONS

  1. In a food processor, process heavy cream until thick. Add remaining ingredients and process for an additional minute.
     
  2. Remove from processor. Freeze at least 4 hours or overnight. Once frozen, place back in the food processor and process 10-15 seconds. Scoop mixture into balls to serve.

 

Yields 4 cups; 8 1/2-cup servings.
